Why Sugar Wears So Many Disguises
Food manufacturers use a wide variety of sweeteners — and an equally wide variety of names for them. A Field Guide to Sweetener Names

Sucrose
The scientific name for ordinary table sugar, made from glucose and fructose bonded together. It's derived from sugarcane or sugar beets and is the most common added sweetener worldwide.
High-fructose corn syrup (HFCS)
A liquid sweetener made from corn starch, processed so that some of its glucose is converted to fructose. It's widely used in beverages and packaged foods because it's inexpensive and easy to blend.
Dextrose
Another name for glucose, typically derived from corn or wheat starch. It's slightly less sweet than table sugar and commonly used in baked goods and sports products.
Maltose
A sugar formed from two glucose molecules, produced when starches break down. It appears in malt-based products, beer, and some cereals.
Agave nectar
A liquid sweetener derived from the agave plant that is very high in fructose. Despite its reputation as a "natural" alternative, it is classified as an added sugar under FDA guidelines.
Molasses
A thick, dark byproduct of sugar refining that retains some minerals. It is still an added sugar and contributes to total added sugar intake.
Invert sugar
Sucrose that has been broken down into its component glucose and fructose, creating a sweeter, more soluble liquid. Common in confectionery and baked goods.
Coconut sugar
A granulated sweetener made from the sap of coconut palm flowers. It has a similar caloric profile to table sugar and is counted as an added sugar, despite marketing that implies otherwise.
Recognizing patterns: Many added sugars end in -ose (glucose, fructose, dextrose, maltose, lactose, sucrose). Others reference syrups, nectars, juices, or "crystals." If you see any of these, you're looking at a form of added sugar — regardless of how natural or wholesome the source sounds.
"Natural" sweeteners like honey, agave nectar, maple syrup, and coconut sugar are still classified as added sugars under FDA labeling rules.
